But for a moment:

E7 → Am

makes Am sound almost like a temporary tonic.

Then the music continues in C.

For example:

C → E7 → Am → Dm → G7 → C

You have not necessarily modulated to A minor.

You simply tonicized Am briefly.

That distinction is useful.
