Play:

C → Am

Both use only white-key material, yet each feels like a different center.

Then play a few chords:

C – F – G – C

and stop.

You clearly feel C as home.

Now:

Am – Dm – E7 – Am

and stop.

You now feel A as home.

Same keyboard collection for much of the music.

Different harmonic gravity.

This shows why a key cannot be defined merely as "which notes are permitted."
